I received the following response (via email) from Nestle Canada upon inquiring about the source of gelatin in Nestle Sundaes:

We have read your email and researched your inquiry.  Our gelatin is from a
vegetable source. The only animal source used in our Sundaes is the milk fat for the ice cream.
